Pudding Cookies

Everyone needs this recipe.  These are the best cookies I have EVER had, ever.  I've never been able to purchase a cookie better than this from anywhere.  This recipe came into my life during my college years - my roommates and I made them on a fairly regular basis.
This morning the first thing my man said when he woke up was "You know, I've been really craving pudding cookies - do you think maybe that's something you could do today?"   He so rarely makes special requests and always compliments my cooking so I thought he was a well-deserving recipiant!

Pudding Cookies
1 c. brown sugar
1/2 c. white sugar
1 1/4 c. butter shortening or half butter, half shortening (I do the half and half)
3 eggs
1 1/2 tsp. vanilla
1 1/2 tsp. baking soda
1 small package instant pudding (any flavor but vanilla is my favorite.  Even pistachio is tasty)
3 1/2 c. flour
1 bag chocolate chips
1/2 c. chopped nuts if desired

Mix together the sugars, butter & shortening and eggs.  Then add vanilla, baking soda and pudding.  Mix again and add flour.  Do not add too much flour, dough should be sticky and very soft.  Mix in chocolate chips and nuts.  Drop onto greased cookie sheets and Bake at 375 for 8-10 mintues.  Eight is usually perfect.  They will look a little underdone when they come out and will be very soft (from the pudding).  Once they cool down they will be perfectly soft and tasty!

  3. These cookies have been among our favorites since you shared them with me, what was it, 12 years ago? I've lost the card you wrote it on, though, which makes me sad. I liked having your handwriting in my recipe file. Still, I'm glad to have it again! I keep meaning to ask you for it but forgetting. You are just SO awesome. Love ya!

  4. oh yeah!! i'm pretty sure these were my main source of calories our sophomore year...not that that is a bad thing!
