Photo Friday

It seems like time is filled, moving faster than ever, and mostly full of good moments.   I haven't done a good job at all of capturing it in writing or recording it in the chidlren's journals so a quick re-cap of April:
tons of soccer practices and games
computer crash and fix
played in the sprinklers
shoveled snow
started my garden seeds and they look fantastic!
found out that the baby is a boy!
painted Emma's bedroom mint green
Signed Christian up for baseball
finally requested a new copy of my patriarchal blessing
had another successful goodness gathering
started cleaning out the basement
dyed Easter eggs
celebrated a wonderful Easter with extended family
cleaned out the garage and added 4 new shelving units
battled 2 cases of a not so fun stomach bug
stitches for Clark in the back of  his leg
glasses for Savanna {for reading}
Savanna caught a snake at a soccer game
Madeline and Emma had a great piano recital
Listened to and loved another fantastic General Conference
walked with Kurt in the mornings
Missionary discussions with my awesome neighbor every Friday
more fantastic mondays at the stables
Game night with my brothers
teen library council for Madeline
figured out all of our school curriculum for next year

I'm tired!

A quick and fantastic Salad recipe

For a few years now I have become opposed to purchasing salad dressings at the grocery store.  It's so easy to make your own and then I know and can control what exactly those ingredients are.  (Who really knows what 'artificial colors and flavors' means?)
I recenlty found this recipe and it is a keeper so I'm sharing!

1/4 c. red wine vinegar
1 Tbs. honey
2 teaspoons minced shallots
1 tsp dijon mustard
2 garlic cloves
1/2 c. extra virgin olive oil

Lettuce of your choice ( I used mixed greens with spinach and arugula)
1 large apple, sliced (I used a gala)
1/2 c. cashews
6 oz crumbled feta cheese

To make the dressing puree the first 5 ingredients in a blender until smooth.  Keeping the blender on the lowest setting, slowly pour in olive oil until well combined.
That was easy, wasn't it?  And you will love it!

I'm feeling grateful that General Conference was so uplifting and inspiring.  It made me think of this lovely daughter of mine who sets a great example for me of going to the temple to do baptisms at least 3 times a month.  A few months ago she took a family name that she had discovered while doing some family history work.  She is awesome.
Next she is going to teach me all about how to index and do my family history research:)

Love this Man

I'm happy we were able to celebrate my husband's 39th birthday this past week.  It was a fun gathering for all.  It left me wondering what fun 40th celebration I need to get planning for next year… perhaps just a quiet getaway with the two of us?  Unlikely but dreamy sounding.

Kurt is kind and helpful and always gives service.  His patience with me is constant and I am ever thankful for his willingness to allow me my independance while loving me and helping me with my big plans.  We have big dreams and I hope we both live long so we may accomplish and dream up more of them.
